Our chef Richard Prouteau, originally from the Loire region, is a lover of seasonal produce and knows the best producers in the region. The result is a revisited traditional cuisine, full of flavours, which delights both pupils and taste buds as the dishes are delicately matched in the plates!

PASSIONATE ABOUT GASTRONOMY
Originally from the region, Richard Prouteau knows his products and typical dishes by heart. At Le Castellane, he wanted to revisit the greatest classics of French cuisine to bring them up to date, while sourcing exclusively from local producers who work with fresh, high-quality local produce. Richard Prouteau is a fan of wild picking, with a weakness for "his little favorite", wild asparagus. The result is a refined cuisine, full of colors and flavors.
